Ellie and Friends Baking Column: Cheesecake Brownies Edition

Cheesecake and brownies are two yummy desserts. Just imagine them combined. This week, I am whipping up a homemade cheesecake brownie dessert. This is an easy and quick recipe when you want to impress your family and friends. The cheesecake is light and airy with a sweet chocolate brownie to balance it out. 

Ingredients

Brownies

  • 1 cup unsalted butter melted 
  • 1/3 cups chocolate chips
  • 3/4  cup  cocoa powder
  • 1 cup  granulated sugar 
  • 1 cup brown sugar 
  • 2 eggs  
  • 1 yolk
  • 1 tbsp  coffee 
  • 1 tbsp  vanilla extract
  • 1 cup  all-purpose flour 
  • 1 tsp  salt
  • 1 tbsp water hot

Cheesecake

  • 16 oz cream cheesecake 
  • 1/2 cup sugar
  • 1 tbsp vanilla extract 
  • 1 pinch salt
  • 2 eggs

Recipes 

Brownies

  1.  Add the melted butter along with one cup of chocolate chips to a large bowl. 
  2. Microwave on short bursts until mostly melted then stir together until smooth.
  3. Dump in the cocoa powder and salt. Then mix together.
  4. Mix in the white and brown sugars. Then add eggs, yolk, vanilla and coffee. Mix until smooth.
  5. Put in the flour and mix, then fold in the remaining chocolate chips

Cheesecake 

  1. Add the cream cheese and mix. (You can use a stand mixer)
  2. Slowly add sugar, then salt and vanilla.
  3. Add eggs one at a time, allowing each to incorporate before adding the next. 

Baking the Brownie Cheesecake 

  1. Preheat the oven to 350°F.
  2. Add ⅔ of the brownie mixture to the bottom of the pan.
  3. Add the cheesecake mixture to the top of the brownies and spread it out (DON’T MIX!!!).
  4. Scatter the rest of the brownie mixture on top and mix with a skewer.
  5. After 10 minutes ,reduce the temperature to 325°F and bake for another 35 minutes
