Ellie and Friends! Baking Column: Homemade Apple Pie Edition

Apple pie is my favorite fall treat. My homemade pie is perfect for the fall season. I have never made apple pie filling before but I have made this crust millions of times. The pie has a homemade flaky crust and an apple pie filling to die for. 

Ingredients

Pie Crust 

  • 2 ½ cups all-purpose flour
  • 1 teaspoon kosher salt or use 1/2 teaspoon fine sea salt
  • 1 tablespoon sugar  
  • 1 cup very cold unsalted butter, cut into 1/2-inch cubes 
  • 4 to 8 tablespoons ice water

Pie Filling 

  • 5 cups thinly sliced apples (peeled and cored), 8-10 medium apples
  • 3 tablespoons sugar
  • 3 tablespoons all-purpose flour
  • 1-2 teaspoons cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons butter, cut into small pieces
  • 1 egg white + 1 tablespoon water

Recipes 

Pie Crust 

  1. Add 1 ½ cups flour, salt, and sugar to a food processor. Pulse 2 to 3 times until combined.
  2. Scatter butter cubes over flour and process until a dough or paste begins to form. (About 15 seconds) There should be no uncoated flour.
  3. Scrape bowl, redistribute the flour-butter mixture, then add remaining 1 cup of flour. Pulse 4 to 5 times until flour is evenly distributed.
  4. Transfer to a medium bowl then sprinkle ice water over the mixture. Start with 4 tablespoons and add from there. Press the dough into itself. The crumbs should begin to form larger clusters. Add 2 to 4 more tablespoons of water and continue to press until dough comes together.
  5. Remove dough from bowl and work the dough just enough to form a ball. Cut the ball in half then form each half into balls. Wrap each ball with plastic wrap and refrigerate for at least 1 hour.

 

Pie Filling 

  1. In a medium bowl, add the sliced apples.
  2.  Sprinkle with the sugar, flour, cinnamon, and salt 
  3.  Toss gently to combine well.

 

Baking the Pie

  1. Preheat oven to 450 ° F.
  2. Roll out and place pie crust in the bottom of a deep pie plate.
  3. Place the apple mixture in the pie shell, then place the small pieces of butter on top of the apple mixture.
  4. Top with the second pie crust, crimp the edges,  cut a few slits in the top crust to allow steam to vent.
  5. Mix the egg white and 1 tablespoon of water together in a small bowl.Brush the top with water and sprinkle with sugar before baking.
  6. Bake at 450 degrees F. for the first 15 minutes, then reduce the heat to 350 °F.  Continue cooking for 40 to 45 minutes, or until the top is golden brown. 
  7. Let the pie cool for 10 minutes before serving.
